The Bread Proofer Hawaiian Style

Parker School Farmer's Market, Waimea, Hawaii – If you ever find yourself trying to figure out how to proof your bread, take a leaf out of this guy’s book. I had stopped by the market to check out the Kekela Farm’s stand as I had been interviewing the owner, while I was there I found this dude with a wood burning oven hitched to his car. His bread was the bomb! He told me that on the cooler days he turns on the heating in the car to proof the bread and on hotter days he turns on the AC to slow the bread down! Gonna give it a spin in my wife’s car – but not my own, don’t want to mess up my seats if things go pear shaped.
